Simple Gluten-Free Peanut Butter Cookies

Last night I summoned the Google for a recipe that would quiet the sweet tooth monkeys, be gluten-free and tasty as hell.  What I found satisfied all of the above.  These are beyond simple, truly delicious and quite cute.

Recipe adapted from Gluten-Free Girl.

1 cup Creamy Peanut Butter

1 cup White Sugar

1 tsp. Baking Powder

1 Egg

Pre-heat your oven to 350 degrees.

Peanut Butter + Sugar with wooden spoon or whatever you feel works best.

Add  baking powder and beat, + the egg and beat until well mixed.

Prepare your baking sheet lined with parchment paper.  I’m not prepared most of the time so I found myself not having parchment.  I just greased the hell out of the sheet.

Roll each cookie into a small sized ball.  Use sugar to coat and place onto cookie sheet, space evenly (fork if you want to) and bake for 10 minutes.  Remove from oven and don’t fuss over them for about 5 minutes.

Transfer to cooling rack and you’re done!  Before I removed my cookies from the sheet I topped them with ridiculously small chocolate kisses.  The world is your cookie, decorate it as you wish.
